Already from its name, which recalls the Piedmontese dialect, we want to convey a strong identity: it is not just any burger, but a Piedmontese burger that comes from a precise gastronomic culture.  <\/span><\/p>\n<p><span style=\"font-weight: 400;\">We have always chosen ingredients from the Piedmont region, emphasizing a short and controlled supply chain. The Sensa Cognisi\u00f9n fully represents this philosophy, because it brings local flavors within a modern, accessible but curated street food. For us, it is a concrete example of an artisanal burger that focuses on quality and consistency.  <\/span><\/p>\n<h2><b>Piedmontese Fassone: the heart of our project<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">At the center of the sandwich we place the Piedmontese Fassone burger, a meat that is a symbol of Piedmont and synonymous with excellence. Fassone meat is prized for its leanness, tenderness, and clean but recognizable flavor, characteristics that make it ideal for starring in a quality burger. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">We study the cooking process to enhance these qualities, keeping the meat juicy without covering its natural taste. The result is a burger that is clearly distinguished from more industrial burgers: in every bite we try to restore authenticity, truly enhancing the raw material. <\/span><\/p>\n<h2><b>Simple ingredients: a fundamental balance<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Next to the meat we choose salad and tomato, seemingly simple but fundamental elements in the construction of the sandwich. We do not consider them simple accompaniments, but essential parts of a well-thought-out overall balance. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">The salad adds freshness and crunch, while the tomato introduces a slightly acidic note that helps balance the richness of the meat. This interplay of contrasts makes the sandwich dynamic and enjoyable from start to finish, preventing it from being heavy or monotonous. It is precisely this balance that makes our Sensa Cognisi\u00f9n a successful gourmet street food.  <\/span><\/p>\n<h2><b>Bagna cauda: identity and character<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">The real distinguishing element of Sensa Cognisi\u00f9n is bagna cauda, one of the most representative sauces of Piedmontese tradition. Placing it in a burger may seem like a bold choice, but for us it is a natural way to express our identity. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">The bagna cauda, with its strong character given by garlic and anchovies, adds depth to the sandwich without being intrusive. It complements the Fassone meat harmoniously, creating a surprising balance. It is the detail that makes this burger instantly recognizable and different from any other.  <\/span><\/p>\n<h2><b>An accessible yet knowledgeable experience<\/b><\/h2>\n<p><span style=\"font-weight: 400;\">Eating Sensa Cognisi\u00f9n, for us, means offering a small gastronomic journey while remaining in an informal context. It is a product designed to be accessible, but at the same time able to tell a story made of tradition, conscious choices and enhancement of the Piedmontese territory. <\/span><\/p>\n<p><span style=\"font-weight: 400;\">In a market often dominated by similar burgers, we try to distinguish ourselves by consistency and personality.
